At Studio Revolution, we have our definite favorites (SRF)! Favorite eats, favorite moves, favorite local shops, favorite everything!

This month, we needed to feature The Coup Restaurant as our SRF (Studio Revolution Favorite).  The Coup is must dine eatery in YYC. The restaurant is a leader in organic, fair trade and vegetarian/vegan cuisine.  Every item featured on The Coup menu is prepared fresh, from scratch, for the vegetarian/vegan and health conscious foodie.

For what seemed like forever, Calgary’s best vegetarian restaurant was closed. At Studio Revolution, we felt the hunger pains of not having The Coup open for dining. (As the saying goes:  “you never realize what you had until it’s gone”).The newly renovated Coup opened to swarm of hungry health conscious foodies at the end of June (and us Studio Revolution chicas were among the first in line). We’re stoked to say that The Coup re-opened with a palette pleasing vengeance, and 3x more capacity!

On first alert that The Coup had reopened, our fearless surf leader Mallory paddled herself into a craving that only The Coup could satisfy. Mallory feasted on:

The Eggplant Sleeping Bags (Appetizer)

  • “Eggplant Sleeping Bags” is a creamy spice packed cashew pesto wrapped in cold eggplant.  The appie was quick to satisfy Mallory’s hunger after one hell of a Ripped Tide SURFSET session at the studio.

Queen of Green Salad (Main) 

  • The “queen of green” salad is no average kale salad. The Coup chefs know how to spruce up the greens while keeping the salad waistline friendly. For extra protein Mallory added the smoked tofu. (Which complimented the pan seared portabella mushrooms, smoked paprika caper berries and zucchini ribbons tossed in a citrus sel de provence dressing beautifully.) If you ask Mal, the Queen of Greens salad is the perfect refreshing summer salad.

 

And the Eatin’ Mess (Dessert)

  • The Eatin’ Mess Dessert is a crumbled meringue layered with cashew-coconut whip cream, citrus mango and berry preserves. It’s then garnished with toasted coconut. (A sweet treat that struck a cord with Mallory’s Hawaiian surf vibe).

In Mallory’s words, ” The food was all to die for!” Not only did Mallory love her meal, but she also loved her experience. The Coup provides a great dining atmosphere complete with incredible service. Welcome back Coup!
